So, after a weekend of eating crap I needed some greenery in my body! I wanted to make my broccoli pasta recipe, but I had no broccoli! I did have something green in the freezer though – peas! So I decided to make this yummy one pan easy pea-sy pasta recipe. Did you see what I did there?! 😉 Not only is this a super easy recipe to make, it is really quick too.
Peas and pasta?
Peas and pasta make a delicious combo. The reassuring comfort of the carby pasta paired with the fresh pop of peas is super yummy. Peas are a great source of Vitamin C, Vitamin E and zinc. As well as that those little balls of green goodness are full of antioxidants to help your immune system. They’re also a great source of protein so it can be a great vegetarian meal providing you use vegetarian cheese. As if that wasn’t enough they are also full of fibre, so they help with digestion and weight loss because they help you feel fuller for longer.
This recipe works well with frozen peas or fresh peas. Most of us have frozen peas in the freezer and this means we can all enjoy this yummy one pan easy pea-sy recipe all year round!
Which pasta?
To be fair this would probably work with most types of pasta. Conchiglioni (pasta shells) would be a good pasta for this as they would catch the peas. I fancied tagliatelle which is exactly what I had.
One of the great things about this recipe is you only need 1 pan – which means win win all round! Less washing up and less to put away afterwards. It’s also easy to just make a single portion so great if you are eating alone. Trying to get a vegetable past my children’s lips is like trying to break into Fort Knox. However, this pea pasta is generally a great meal for children as a lot of them like peas. You could make with some funky pasta shapes if you think they will be more likely to eat it.
One Pan Easy Pea Pasta
Serves 4
Cook time: 15 minutes
Equipment needed:
Saucepan
Ingredients
- 1 tbsp Olive oil
- 1 onion (diced)
- 450g frozen peas
- 450ml Vegetable stock
- 300g pasta of your choice
- 50g Parmesan (grated) Plus extra to top if you like it very cheesy!
- Pine nuts to garnish
- Salt & pepper to taste
Method
- Heat the oil in a large saucepan, over a medium heat.
- Add the diced onion & cook until translucent
- Add the peas and vegetable stock and bring to the boil
- Add the pasta. The stock will only just cover the pasta, this is because it is going to reduce to become your pasta sauce. Cover with a lid but check regularly to ensure the pasta doesn’t stick. Add water if needed.
- When the pasta is done there should be very little stock left. Stir through the parmesan.
- Season to taste & dish up.
- Garnish with extra Parmesan if you’re extra cheesy like me. I also like to add some pine nuts for a bit of texture.
